i actually have never liked the texture or taste of mayo anyways, but i know a lot of people do like to use it on sandwhiches or in some dips, so this is a great lowfat alternative that if I had to compare, would be the closest to mayonnaise?!
12 ounces extra firm tofu, drained
1 1/2 tsp sea salt
2 tsbl lemon juice or red wine vinegar
combine all in a food processor until smooth and creamy
