Did you know that you can substitute a mashed banana for butter in a recipe. When bananas develop brown speckles, theyre great to freeze for smoothies, or to use in a recipe, such as this!
1 1/4 cups whole wheat pastry flour
1/4 tsp baking soda
1/8 tsp salt
1 ripe banana mashed
1/2 cup soymilk or other nondairy milk
1/4 cup applesauce
1/2 tblsp apple cider vinegar
1/2 tsp vanilla extract
1/4 cup chopped dates
optional:
add one or all!
1/4 cup oats
1 tblsp freshly chopped ginger
1/8 cup dried cranberries
chopped walnuts
mix dry ingredients. add with the rest, and stir in the dates.
preheat over 375. bake about 25 minutes or until toothpick comes out clean
