Cold Beet Soup

2 bunch beets
1/2 cup- 1 cup oj
zest of 1 lemon
2 1/2 tblsp lemon juice
salt and pepper
boil beets 40 minutes. peel, whirl all ingredients in food processor. Chill. Service w/ mint leaves on top
