1 cup of couscous, combine with 1 1/2 cups water until boiling. remove from heat and let si for 10 minutes. stir and put in fridge until cool.
combine:
1/2 cup canned chopped artichoke- save juice for dressing
1 can garbanzo beans
1/4 cup sliced cherry tomatoes
a few mint leaves chopped
1/4 white onion chopped, or you can use scallions
1/2 cucumber diced
mix dressing:
1/2 fresh squeezed lemon
1/4 cup artichoke juice
some shakes of cayanne pepper
add cous cous and salad mix, stir than add dressing
You may want to add more dressing mix if it seems dry, serve cold.
