Pizza for two

16 oz pizza dough, whole wheat if possible
1/2 cup of your favorite sauce, or more, to taste
1 long, thin eggplant sliced into 1/2" thick rounds
1/2 medium onion sliced into 1/2" thick rounds
3-4 gloves garlic diced
1/2-1 tsp. dried basil or oregano, spicy seasoned salt, & dried mint leaves
(optional) - Olives, chopped and marinated artichoke hearts, additional spices, seasoning, & date sugar to taste.

For a thin crust pizza, use only half the dough and reserve the other half for later. Spread dough on a 12" round pizza pan and cover evenly with sauce. Place spices, and salt in a plastic sandwich bag, add eggplant rounds and shake to coat. Place eggplant on pizza as you would pepperoni. Repeat process with onion and place over eggplant. Sprinkle with diced garlic, olives, and artichoke pieces and additional spices to taste.

Bake at 375 to 400 degrees for 10 to 15 minutes. Time and temperature will vary with volume of sauce and other ingredients. Cool for several minutes on a wire rack before serving.
