yam/veggie salad

this is a recipe i recently picked up in New Zealand, where they use beets and yams in about everything! This one is simple and taste amazing!

steam a handful of asparagus and a head of broccoli
bake on a cooking sheet 1 big yam, half a red bell pepper and half a yellow bell pepper, and one (optional) beet. once baked and cooled, peel the skin off the bell peppers and yams.
boil on the oven 1/2 cup water, squeeze juice from one orange, and grate half the rind, 2 tblsp brown sugar and once mixed, let cool.
cut up all the veggies and toss with the cooled oj mix.
