halve a med butternut squash, toss seeds and place halves side up on baking dish. cover with foil and bake for 40-50 min at 375.
scoop out flesh and mix with
cooked brown rice, chopped browned onions, scallions, parsley, dried cranberries and chopped walnuts or pecans. season with salt and pepper
fill the squash shell with mixture and bake for 15-20 min.
