1/2 cup cornmeal
1/3 cup sugar (preferably raw or turbinado)
2 1/2 cups soy- or other nondairy milk
1 cup solid-pack canned pumpkin
2 tablespoons molasses
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/3 teaspoon salt
Whisk all ingredients together in a saucepan. Bring to a slow simmer over medium heat and cook, stirring constantly, until thickened, about 15 minutes. Spoon into small bowls and serve warm or chilled.
