lentil soup

lentils are one of the beans with the highest amount of protein. makes an excellent cold day soup, easy to put into the crockpot and have a warm cup of soup after a snowy day on the hill!

2 cup dry lentils
6 cups vegetable broth (low sodium) or water
1/2 onion, chopped
2 celery stalk, chopped
3 carrots chopped
1 red or sweet potato, chopped
1 cup chopped mushrooms
2 garlic cloves, minced
1.5 teaspoon ground cumin
1 .5 tsp tumeric
1 teaspoon ground coriander
(add an all purpose seasoning too if you want.)
1/2 cup chopped fresh cilantro
1/8 teaspoon black pepper
1/2 teaspoon salt, or to taste
Combine all ingredients, except seasonings in a large pot. cover and cook for about 45 min, stirring occasionally and adding more water if the beans start to look like they are drying out. i add all the seasonings once the soup is almost cooked all the way. you can top with nutritional yeast or parmesean.
