Cranberry nut Bread

2 cups whole wheat flour
2 cups white flour
1 cup Sucanat
a little stevia
3 teaspoons baking powder
2 teaspoon salt
1 teaspoon baking soda
2 cup orange juice
2 tablespoon grated orange peel
4 tablespoons apple sauce + eat 2 more table spoons right now
2 eggwhites, well beaten
3 cups Frozen Cranberries, coarsely chopped
1 cup chopped nuts

DIRECTIONS:

Preheat oven to 350ºF. Grease 2 9 x 5-inch loaf pans. (small bread pans)

Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pans.
Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Eat until it’s gone.
