1/2 yellow onion, diced
1(12 ounce) package frozen chopped spinach (thawed and drained)
1 can artichoke hearts, chopped
saute the onion, spinach, artichokes in a pan on a low heat stir occasionally (no need for oil, the water from the spinach should be enough) for about 4 min
1 (12 ounce) package firm silken tofu
3 garlic cloves, chopped
1 tablespoons apple cider vinegar
1 teaspoon dried basil
1 teaspoon dried parsley
1/4 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon black pepper
Put all above ingredients into a food processor and blend until all the tofu is mixed well
combine all ingredients
Bake in oven at 350 for 15-20 minutes, til lightly brown on top.
serve with whole wheat crackers, bagette, baked chips
