gingerbread cake

1/2 cup raisins
1/2 cup chopped dates
1 3/4 cup water
3/4 cup sweetener (1/2molasses, 1/2 maple syrup
1/2 tsp salt
2 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
1/4 tsp ground cloves
2 cups whole wheat pastry flour
1 tsp baking soda
1 tsp baking powder
combine dried fruit, water, sweenter in large saucepan and bring to a boil. boil for 2 min. than remove and let cool
preheat oven to 350
mix dry ingredients
when fruit mixture has cooled mix it with dry ingredients
quickly spread into a 9" nonstick pan and bake 30 min or until toothpick comes out clean
