this dessert is perfect for autumn while cranberries are in season and apples are ripe. the variety of textures and flavors make for an interesting treat without all the refined sugars and great for the holiday season.
2 large tart apples, peeled and sliced
1/2 cup frozen or fresh cranberries
3/4 cup grape nuts or high fiber whole wheat cereal
3/4 cup rolled oats
1/2 tsp cinnamon
1/3 cup brown rice syrup
2/3 cup apple juice
1/4 tsp cornstarch
preheat oven to 350
arrange apples in 9 x 9 baking dish and sprinkle in cranberries
in a bowl, mix cereal, oats, and cinnamon than stir in brown rice syrup. spread evenly over the apples
in a small bowl mix apple juice and cornstarch and pour that over mixture
bake for 50 minutes or until apples are tender
