Ratatoulle

Such a simple and delicious recipe. Serve over quinoa, brown rice or whole wheat pasta.

1 eggplant, diced
3 C tomatoes diced
3 C zucchini diced
2 C onions chopped
2 C green pepper chopped
1 T garlic
add some italian seasoning (basil, rosemary, oregeno), some garlic powder and salt and pepper to taste

Spray pan. Cook over medium heat – throw a little water (1/4 – 1/2 cup) on it to help it cook since you didn’t put in any oil.

Serve with French bread
